Freycinet is a cashew based cheese. It is made and matured in a 600g wheel before being hand cut and vacuum packed. The cheese is rolled in a blend of native Tasmanian botanicals such as pepperberry leaf, kunzea and saltbush. It is creamy white in appearance with a firm sliceable texture. A delicate herbaceous flavour complements the lactic tang of the cheese.
